Quick and Clean Pineapple Coconut Mojito
(recipe serving size – 1 drink)
4 oz coconut rum (Captain Morgan)
2 oz pineapple juice (Dole)
1/4 cup club soda (sodium-free)
8 mint leaves
Juice of 1/2 lime
Fill a 32 oz shaker 1/3 of the way with ice. Muddle the mint until the inside of the shaker is fragrant. Add the rum, pineapple juice and lime juice. Shake until the ingredients are fully incorporated. Pour the contents into a glass. Gently stir in the club soda and serve. Adding additional ice to the glass is optional.
