Citrus Parsley Salad (AKA Sweet Baby Orange BBQ Wings)

Ignorance can be bliss at times. When I’m in the mood to be healthy, I think of things I can cut out of a dish or add to it to give me that sense of accomplishment — like I’m doing my body some real good. The end result is usually something that can legitimately be considered healthful.

I felt really good about myself when I put together this Citrus & Parsley Salad with Chicken. Don’t mind the little bit of sugar in the oranges. This dish is TOTALLY low carb and barely has any fat. 🙂

But in all seriousness, this recipe for Sweet Baby Orange BBQ Wings is EVERYTHING! Next time you want to get messy, whip up a batch of these. They are quick and easy to make, thanks to a delicious helping hand from one of my favorite barbecue sauces stores sell — Sweet Baby Rays — leaving each wing packed with layers of flavor that will leave you craving more.

Sweet Baby Orange BBQ Wings

For the sauce:

1 tb butter

1 tb olive oil

1 small onion, diced

3 cloves garlic, sliced

1 tsp kosher salt

1 tsp crushed red pepper flakes

1/4 cup fresh parsley, chopped

1 cup Sweet Baby Rays barbecue sauce

Zest of 1/2 large orange

Juice and flesh of 1/2 large orange

Sauté onion in butter and olive oil over medium heat, seasoned with the salt and pepper for 5 minutes. Add the garlic and parsley. Cook for another 1-2 minutes until the garlic is slightly brown. Add the barbecue sauce, orange zest, flesh and juice. Simmer for 5-10 minutes over low heat and keep warm.

For the wings:

12 whole wings

2 tsp kosher salt

2 tsp cracked black pepper

2 tsp granulated garlic

Drizzle of olive oil

Preheat oven to 425 degrees.

Coat the wings with a drizzle of olive oil and season with the spices. Cook the wings on a cookie sheet for 25 minutes.

Bringing it all together:

Toss the wings in a 1/2 cup of the barbecue sauce and broil them for 1-2 minutes on each side, until the sauce has caramelized. Place on a platter and top with the remaining barbecue sauce.

Serve alongside additional optional sauces for dipping and enjoy!
